Avocado + Spinach + Dates Smoothie Bowl

   Hey! Anyone who follows me on Instagram will know I am a huge fan of smoothies & smoothie bowls.

   Today I want to invite you to make a green smoothie bowl. It’s a simple one and absolutely delicious.

   In this recipe the avocado and the fresh ripe banana are the base. The creamy avocado in combination with baby spinach and fresh green mint is so good, you really should give it a try.

Here’s the Recipe:

  • 1 avocado, ripe

  • 1 handful of baby spinach

  • 1 large banana (or frozen one)

  • 6-7 dates, pitted

  • 4-7 fresh mint leaves

  • 2 spoons of lemon juice

  • 100 ml filtered water

  • 1 teaspoon of coconut oil (optional)

  • 1 teaspoon of pine nuts

  • Pine nuts, slices of banana (topping)


  1. Combine all of the ingredients in a blender.

  2. Process until totally smooth.

  3. Pour the smoothie into a bowl.

  4. Add your favorite toppings.

  5. Enjoy with a teaspoon!

   So, avocado, containing a wealth of healthy fats, helps to boost the metabolism. Fresh mint contains trace amounts of iron, fiber, vitamin A and potassium. Spinach is a source of antioxidants.

   The sweetness in this smoothie comes from dates and the fresh ripe banana, but you can also use a frozen banana.

   This smoothie is super yummy, its silky and smooth texture reminds of a cream dessert – but in a healthy way.

   As concerning the toppings, the options are endless!

   If you don’t have on hand pine nuts, you could use other seeds instead (maybe sunflower or sesame seeds).
